To make 16 delicious little quesadillas, you’ll need these ingredients:
- 25oz chopped butternut squash
- 7oz feta cheese
- 11oz watercress
- 16 small flour tortillas
Method:
- Heat oven to 200C. Boil butternut squash for ten minutes until tender, drain, and allow to cool.
- Divide the squash, feta, and half the watercress over the tortillas and season.
- Fold each tortilla into quarters, place on a baking tray, and drizzle them with a little olive oil.
- Put another baking tray on top of the first and press down. Leave this second baking tray in place for five minutes.
- Take the second tray off and bake for a further five minutes, until golden. Serve with the remaining watercress.
