Most cookbooks and magazine recipes expect you to have an ice cream maker at home, but you can mimic the churning effect of an ice cream machine by shaking or tossing the ingredients inside a sealed Ziplock bag or freezer bag.

The best part about this method is how quickly it comes together. In just 5-10 minutes, you can whip up a delicious batch of homemade ice cream.

An essential ingredient in this method is salt. So why do you need salt to make quick freeze ice cream?

When you mix salt with ice, it lowers the freezing point of the ice. Water freezes typically at 0°C, but a 20% salt solution freezes below -17°C. In this version, the ice cream solution is so cold that it makes it quick and easy to freeze your flavored milk (or cream) into ice cream.

Ingredients:

  • one cup of milk;
  • half tablespoons of powdered sugar;
  • half teaspoon vanilla (or any other flavors that you prefer);
  • 2 to 3 cups ice, crushed or cubed;
  • one-third cup sea or coarse salt;
  • one small 1-liter Ziplock freezer bag;
  • one Ziplock freshness bag of 3 liters.

Preparation:

  1. The preparation is very easy. After all, we are telling you about the easiest method to make homemade ice cream, right? First, add milk, vanilla, and powdered sugar to the small bag.
  2. Seal the bag tightly, taking care to squeeze out any air trapped inside the bag.
  3. Mix ice and salt in the 3-liter bag. Place the small bag inside the large bag and seal it tightly.
  4. Shake vigorously for about 5 minutes. After that, you can have fun swinging it around with friends, but you may need to wear winter gloves because the bag will get very cold.
  5. After the 5 minutes duration, the mixture you put into the small bag would have stiffened. Do not open these bags yet; set them aside on a napkin for a little while. Rearrange the ice cream in the larger bag so that it surrounds the smaller bag.
  6. Open them and take out the ice cream from inside the small bag. Serve immediately.

How to Make Ice Cream in a Blender?

When it’s too hot outside, we can only think of one thing: to cool off. What could be better than a nice bowl of homemade chocolate ice cream made in a blender?   • 25g cocoa powder;
  • 100g of sugar;
  • 250ml of milk;
  • 500ml Greek yogurt;

Preparation:

  1. In the bowl of your blender, put half the milk, and the cocoa powder. Add the sugar. Blend until the mixture is smooth.
  2. Put the mixture in a saucepan and heat it until it simmers. While mixing, add the rest of the milk. It is necessary to mix until the sugar is dissolved completely. Then let it cool.
  3. Once the preparation is cold, put it back in the blender, adding the yogurt and vanilla extract.
  4. Use the “smoothies” function or the low speed of your blender to churn the mixture till it is homogeneous and smooth. Put in the freezer until the edges solidify.
  5. Take the preparation out and blend it again, this time at medium speed. Once smooth, freeze it again.
  6. Repeat the operation five more times, then let it solidify.

Old-Fashioned Homemade Ice Cream

This old-fashioned ice cream recipe comes from France and is prepared with fresh walnuts, gelatin, fresh cream, and whipped cream, without eggs.

Ingredients:

  • 400 g shelled fresh walnuts;
  • three bottles of very cold water;
  • 5 cups heavy cream;
  • 300 g caster sugar;
  • 40 g of gelatin;
  • 150 ml whipped cream.

Preparation:

  1. Crush the fresh walnuts, adding very cold water so that everything does not turn into oil.

  • 1 tbsp. vanilla flavoring.

Preparation:

  1. In a saucepan, put the milk and vegetable cream to heat.

  3. Then add the sugar and mix well.
  4. Add the cornstarch and heat over low heat, constantly stirring to prevent the mixture from sticking to the bottom of the pan. The mixture will start to thicken.
  5. As it thickens, stop cooking and pour your preparation into a container.

  • ice cubes;

  • two large 3-liter freezer bags in zip-closure.

Preparation:

  2. Zip up the freezer bag, taking care to press down firmly to squeeze out all the air from the pack.
  3. Place this bag inside a second small bag, and seal it tightly.
  4. Now fill the big bag halfway with the ice cubes. Add the coarse salt.
  5. Put the small bag inside the big bag, well in the middle of the ice cubes. Close the large bag.

Did you know that you can make sugar-free ice cream with a Thermomix? All you need is a fruit base in your freezer and a liquid or creamy base (such as almond milk or coconut milk). Preparation:

  1. Place the stand mixer bowl and whisk in the freezer. Place the fluid cream in the fridge. Mix the peaches, 100g sugar, and lemon juice in a bowl. Place this mixture in the refrigerator for 2 hours, stirring every 30 minutes. Take the juice from the peaches and reserve the fruit in the refrigerator.
  2. In a new container, whisk the eggs until they whiten. (1 to 2 minutes). Add the remaining sugar (150 g) gradually, whisking gently for one minute. Place the bowl and whisk on the stand mixer. Pour the cream into the bowl and whisk until you get a whipped cream texture.
  3. In the mixture of eggs and sugar, add whipped cream and milk. Continue to mix, starting from the center and going up towards the edges to avoid the cream falling down. Add the peach juice to the preparation while still mixing.
  4. Since we are not using an ice cream maker, place your preparation in a stainless-steel mixing bowl and place everything in the freezer for a few hours, mixing the mixture every half hour to obtain a smooth preparation. The more this step is repeated, the more you will obtain a creamy product.
  5. When the ice starts to set, add the reserved fruit and continue following the technique used in the previous steps. When the texture seems ideal, serve and enjoy!

  • five squares of dark chocolate at 75% minimum.

Preparation:

  1. Peel and cut your bananas into pieces and leave them in the freezer overnight.
  2. Melt four squares of chocolate in a bain-marie and pour them into the bottom of the ice cream cones. Let it stand. Dip the end of the cones in the rest of the melted chocolate and sprinkle with pistachio chips. Let it dry.
